“Bacon” and Egg Breakfast Cups

I love breakfast. I have no problem eating breakfast at any time during the day whether it be morning, noon, or night. I recently found a good, quick and easy to make breakfast snack that is perfect for a meal or on the go.

As a disclaimer, I am vegetarian, I do not eat bacon but I use a soy substitute for this recipe. I am sure this will work just as well with normal bacon but please check the proper cook times so as to not eat raw or undercooked meat.

These tasty treats take about five minutes for prep time and about 15 minutes in the oven. First, preheat the oven to 375 degrees Fahrenheit. I found this temperature works best for me.

I use silicone cupcake wrappers for this process, I found they don’t stick to the food and allow for a better finish. Then line the wrapper with bacon so it creates a cup that can hold its structure once cooked.

DSC04988The I crack an egg into the wrapper. At this point, you can add really any topping that you want! I like to use some sort of cheddar or asadero cheese, salt, pepper, some cumin, and top it off with sesame seeds. This just gives a fun crunchy texture on top that I really enjoy.

Then you just put the cups in the oven for about 15 minutes. If you do put cheese on your cups, be careful to make sure the egg is fully cooked, the melted cheese (especially if white) can sometimes mimic an uncooked egg.
