Apple Chips

I know this week is supposed to be my finale showstopper for my season 13 Great British Bake-Off challenge. But I’m not ready. What I planned was insanity and I need more time. So, I decided to take a quick break and make some apple chips! Dried fruit is always a great snack because it’s healthy and I can mindlessly eat without having to worry about overeating.

Apple chips are especially nice because have like 15 chips is the same as just eating an apple. I often find myself with a lot of apples, but I forget to eat them in a timely manner. They tend to be on the edge of going bad when I remember that I have apples. This is one of the recipes I fall back on so I can use the apples and avoid letting them go to waste.

Ingredients

The recipe only calls for two ingredients, but I will sometimes add a third. It’s just apples and ground cinnamon! This is a classic combination, but I do sometimes like to explore with other spice combinations. The cinnamon makes the chips on the sweet side, but it can be made savory with the right spices.

Process

The first (and kind of only) step of making apple chips is cutting the apples. The difficult part about cutting the apples is they need to be in thin slices to really get a crisp chip. Now, if I had a mandoline slicer, this process would be much easier.

But I do not have that tool. I had to be very careful with a knife. My slices were not uniform. I do not have great knife skills. They are decent but I cannot cut things with a consistent size. Consistency is truly a skill. One I don’t have.

Any slice that wasn’t the right size was typically too small and because more of a see-through shave. But I did my best! I then laid out the slices onto baking trays. Each slice should lay flat, so they do take up a bit of space.

The last step before going to the oven is adding the spices to the apples. I used my hands to control how much cinnamon was spread over each slice. Using the shaker caused a little bit of a landslide on one portion of the slices. I also added a dash of salt. Apparently, I just think everything should have at least a tiny bit of salt.

And finally, it’s time to go into the oven! This is a low and slow cook so make sure to have a lot of time set aside for the apples to cook. Luckily, they do not require any babysitting so you can just throw them into the oven and forget about them until the timer goes off.

Reflections

This is such an easy recipe, and the results are delicious. The only downside is I can inhale all of the apple chips in one sitting very easily. But is that truly a downside? I think it might be more of a self-control problem than a problem with the recipe. While the cutting can be a little taxing, the ability to forget about the apples in the oven is nice. Plus, the long cook makes the kitchen smell delicious!

Lessons

But what about the core?

When cutting the apple slices, I realized, what do I do with the core? Well, the answer was simple: Nothing! I just cut the core along with the rest of the apples. The slow cook with make the apple core blend well with the rest of the apples. Although, you still need to get rid of any seeds, stalk, and calyx.

Apple Chips

Ingredients

  • 3 Apples
  • Ground Cinnamon for sprinkling
  • Pinch of Salt optional

Instructions

  • Preheat oven to 225° Fahrenheit.
  • Cut each apple into slices that each have an approximately ⅛ inch thickness. Remove seeds, stalks, and calyx of each apple.
  • Lay each slice flat on a tray. Sprinkle with cinnamon (and salt, if desired).
  • Bake for 2 to 2 ½ hours. All moisture should be removed the apples, they should be crisp to the touch and browned around the edges.
