Snickerdoodle Cookies

Snickerdoodles are such an underrated cookie. While the most common cookies tend to be sugar cookies or chocolate chip cookies, Snickerdoodles are so delicious that they deserve to be close to the top of the cookie hierarchy. One of the unique characteristics of a snickerdoodle is the sugar and cinnamon crust that surrounds the cookie. This gives each cookie a crisp coating which is a delightful contrast to the soft texture of each cookie. Ok, I need to go eat one of these before getting any further. Continue Reading →

Fluffy Peanut Butter Cookies

This recipe requires quite a bit of sugar. In fact, there is a 2:3 ratio of sugar to flour which is pretty high. But the sugar is a mix of white sugar and brown sugar to add another layer of rich flavor to the cookies. For the leavening agent in the cookies, we are using baking powder but not too much because a large rise is not desired. And, of course, we’ll need peanut butter. 😊 Continue Reading →

Cornbread Bites

Cornbread has been one of my favorite foods from a young age. I just love the taste and texture. I could eat cornbread with any meal and at any time. Even though the bites are small, the cornbread texture is still light and fluffy. Continue Reading →

Apples are a remarkably interesting fruit to work with because they don’t really blend. They will stay chunky even if they have a soft texture that alternates the mouthfeel between the dough and tender apples. Continue Reading →

Not only did I gain a fantastic recipe and methods, but I also learned the proper techniques for working with dough. Armed with this knowledge, I have been able to approach many other recipes with far more success than before. Continue Reading →

Sweet Brioche Rolls

Bread is delicious. I absolutely love brioche but then my partner told me that the brioche we got wasn't like the one he remembered. He remembered it sweeter. And so began my journey to find the right recipe to make the perfect sweet brioche roll. I am not sure if this is it but this version is pretty good, if I do say so myself. Brioche is an enriched dough (which I'm pretty sure means: has more ingredients than water, flour, yeast and salt). Due to this, it takes more time to rise because the yeast needs more time to activate. The total recipe will take about six hours but less than an hour of that will be active time. Continue Reading →
