Chocolate Chip Cookies

Before I jump back into doing my Great British Bake-Off Challenge, I wanted to do a warm-up bake to shake the rust off my baking skills. I decided to do a classic: chocolate chip cookies!! Seeing as I decided to post this on 3/14, I’m a little disappointed that I didn’t decide to make a pie… But cookies are so easy to make, and they are absolutely delicious. And I am so excited to be working in the new space! It’s not complete yet but we are so close to finished! So let's get baking!

Great British Bake Off Challenge – Week Four Technical: Stroopwafels

I’m not going to lie. I was very intimated by the idea of making Stroopwafels as a part of the technical challenge. I have been in love with stroopwafels for many years, ever since my brother brought them home after traveling around Europe. They are a thin waffle, almost cookie like in thinness, but waffle like in their size, that have been cut in half a filled with a delicious, spiced caramel filling. But the only way to get over being intimated by something is to face it head on. And technical challenges are all about facing the unknown.

Great British Bake Off Challenge – Week Two Showstopper: Biscuit Board Game

The Showstopper challenge for Biscuit week feels like it was made for me! It’s time to make a biscuit board game! There are so many great board games to choose from. Most contestants chose childhood classics (like shoots and ladders or Monopoly style games) and that disappointed me. Why didn’t anyone go for Twilight Imperium?!? Just kidding… Even I’m not that crazy. I decided to do a simpler game that I think is ever bit as classic: Battle Sheep. I did take inspiration for the recipes from Sophie and the board game she made.

Great British Bake Off Challenge – Week Two Technical: Fortune Cookies

I have made it to the week two technical: fortune cookies! This is hard to admit but technical are extremely hard for me. I ended up trying to many recipes and variation and, even in the end, I couldn’t make the cookies exactly as I imagined them. I grew up eating fortune cookies, so they have a classic taste, thinness, and snap that I imagine for the final product. But getting these cookies there took some time.

Great British Bake Off Challenge – Week Two Signature

It's biscuit week! Or cookie week for those of us in America. Because what we call biscuits are really just rogue scones. And the first challenge of the week is a Sandwiched Biscuit. This signature challenge has a wide variety of interpretations but one that really stood out to me is Stacey’s Sparkly Chocolate Sandwich cookies! (Original Recipe available on the GBBO website). These cookies looked rich with chocolatey goodness and, while the marshmallow fluff presented a potential mess, it looked absolutely delicious.

Snickerdoodle Cookies

Snickerdoodles are such an underrated cookie. While the most common cookies tend to be sugar cookies or chocolate chip cookies, Snickerdoodles are so delicious that they deserve to be close to the top of the cookie hierarchy. One of the unique characteristics of a snickerdoodle is the sugar and cinnamon crust that surrounds the cookie. Fluffy Peanut Butter Cookies

This recipe requires quite a bit of sugar. In fact, there is a 2:3 ratio of sugar to flour which is pretty high. But the sugar is a mix of white sugar and brown sugar to add another layer of rich flavor to the cookies. For the leavening agent in the cookies, we are using baking powder but not too much because a large rise is not desired. And, of course, we’ll need peanut butter. 😊 Continue Reading →

Homemade Chocolate Cookies

I can’t lie, I love chocolate. Chocolate chip cookies have always been my favorite but this recipe allowed me to indulge on chocolate even more. And the soft texture is absolutely perfect, it feels like this cookie is the perfect combination of chewy and soft that I’ve been aiming for.
