Butter Crackers

Since I made hummus last week, I wanted to try my hand at making a something to dip into it! Crackers seemed like a good place to start since it’s always been a curiosity for me. Since I do love the buttery crackers I can get from store, a butter-based cracker sounded like a good way to go! I don’t normally work with a non-yeast dough, so this was definitely a fun new endeavor. Continue Reading →

Homemade Bread

I have been trying to make bread for years. But no matter what I tried; I could never get it to a place where I wanted to it be. Then I discovered cooking with a cast iron pot and the book “[]”, and it changed by bread making life! Not only did I gain a fantastic recipe and methods, but I also learned the proper techniques for working with dough. Stovetop Rice Pudding

I find myself on the road often, even in a Pandemic, and in order to be safe as possible I try to order online and avoid restaurants whenever I can. One of my favorite types of foods to eat on the road is Mediterranean because it’s generally healthier than many of the other options. And I would be lying if I said the Rice Pudding desert wasn’t alluring. So, against my better instincts, I decided to add it to my order, and I was sent into a blissful food coma. Rice pudding is just so good, being lightly sweeten with that hint of vanilla and the milky goodness absorbed into the rice. I was a little nervous about making it because: having unlimited access is probably a bad thing and I was worried about the process. And fortunately (and unfortunately) it is super easy to make! And I have a feeling I will be trying it out more in the future. Continue Reading →

Homemade Onigiri

Japanese Rice Balls nestled their way into my heart several years ago during my trip to Japan. As we were exploring Tokyo, it was always easy to satiate my hunger by popping into a convenience store and grabbing an Onigiri or two. And since I've come back to the US, I have missed the flavor and taste. So my hunt began to start making them myself so I could always have one of my favorite foods. While I know there are many possibilities for Onigiri from varying the type of rice to the fillings used, I will focus more on the fillings. But when it comes to Onigiri, the possibilities do feel endless! Continue Reading →

Baked Catfish

Being pescatarian, I am always experiment good fish recipes. Recently I found that I have a deep love for catfish. It's absolutely delicious and can be cooking in so many different ways but today I wanted to go over a baked catfish recipe. The best part of this dish is how easy and fast it is to prepare. There really is only 5 minutes of prep time and approximately 15 minutes of cook time. And with that, you'll have a lovely golden brown meal. This recipe takes only a few ingredients, and it's very easy to mix and match what you want for flavor. Continue Reading →

Easy Homemade Sushi

Sushi is one of my easy go to dishes when I don't know what to eat. There is very little cooking involved and there are many combos for fillings. The main ingredients needed for sushi are rice, seaweed paper, and vinegar (I use white wine vinegar). For this roll, I used avocado, imitation crab and cucumber. My rule of 3 for sushi is 1 protein, something crunchy and something creamy. Continue Reading →

Sweet Brioche Rolls

Bread is delicious. I absolutely love brioche but then my partner told me that the brioche we got wasn't like the one he remembered. He remembered it sweeter. And so began my journey to find the right recipe to make the perfect sweet brioche roll. I am not sure if this is it but this version is pretty good, if I do say so myself. Brioche is an enriched dough (which I'm pretty sure means: has more ingredients than water, flour, yeast and salt). Due to this, it takes more time to rise because the yeast needs more time to activate. The total recipe will take about six hours but less than an hour of that will be active time. Bagels are one of my favorite foods, they are perfect for a snack, or great as a meal. They can pair with plenty of other foods or are perfect on their own. This is one of my favorite recipes because it is quick to whip up and is mostly hands off. And the results are fantastic, the bread is delicious and the perfect texture. Continue Reading →
