Marshmallow Fluff

Marshmallow Fluff is a delicious, silky, and smooth filling that pairs well with cookies another confections!
Prep Time 5 minutes
Cook Time 15 minutes
Mixing Time 10 minutes
Total Time 30 minutes

Ingredients
  

  • ½ Cup Granulated Sugar
  • ¼ Cup Water
  • ¾ Cup Light Corn Syrup
  • 2 Egg Whites
  • ¼ Tsp Cream of Tartar
  • Pinch of Salt
  • 1 Tsp Vanilla Extract

Equipment

  • Sugar Thermometer

Method
 

  1. Mix sugar, water, and light corn syrup into a small pan.
  2. Place on low heat and stir frequently until the sugar dissolves.
  3. Turn up heat and and cook until the mixture reached 241°F
  4. When the syrup is hot enough, steadily pour it onto the egg whites. Whisking quickly as you pour (I used a stand mixer)
  5. Whisk for 8-10 minutes or until you have a thick, fluffy and glossy mixture
  6. Beat in salt and vanilla extract
  7. Enjoy!!
