Green Goddess Dressing

I was recently gifted a large bunch of herbs and my brain immediately started turning. What do I do with this? Then I remembered an show that mentioned Green Goddess Dressing. And that’s how my investigation began. Green Goddess dressing is really just a blend of herbs and yogurt that combines to be amazing.

What’s great about this recipe is that the ratio of ingredients is something you can really play with. A lot of Green Goddess dressing recipes that I saw contained tarragon. I didn’t use any! And it still tasted delicious. I guess, what I am saying, is that this is a recipe where rules can be thrown out of the window. It’s a dressing where the dish you make can be unique ever time but still have a great flavor.

Ingredients

The ingredients to make Green Goddess dressing requires a lot of herbs. The key to picking which herbs and the safe herbs are soft and leafy herbs. Now, I also used dill which doesn’t exactly fit this category as well as something cilantro or basil, but the leafy herbs are more likely to work well. Other can be tried for a more dynamic experiment.

Process

There is no need to break this recipe into step because it is a true, one-step recipe. Put everything into a food processor and blitz until the world ends. I really love how low effort this recipe is, I did not prep anything save the lemon.

The herbs can go in the blender; the liquids can as well. Even the chives and garlic clove without being chopped. The only item that needs any prep is the lemon. I just a lemon in half and just used half of the juice and zest that same half. But in reverse order.

Then it was time to blend and blend and blend. The blending process did take a bit longer than I had originally anticipated. At first all the herbs just got chopped up, but they were still in tiny pieces. Then they became smoother and smoother until finally becoming the same (ish) consistency as they yogurt base. I still got some leafy bit now and again though.

Reflections

This was a fun recipe that did not require a lot of effort. I don’t always eat as much fresh food as I want to, so having a condiment that carried such a fresh flavor was something I really enjoyed. This Green Goddess dressing has gone well with salad, rice, fish, really anything. But I am always into a good herb mix.

Lessons

Converting to Powders

The recipe original called for 1 garlic clove, but I did not have any in my pantry. But I did have garlic powder. So, I thought, why not use the powder for replacement? But then came the question, how much garlic powder is a clove? Quick search yielded back 1 teaspoon which was less than I had anticipated.

Powdered ingredients are a concentrated version of that ingredient. So less is more the majority of the time. It’s a good thing to keep in mind before dumping an obscene amount of garlic powder into something. Which I may or may not have done before…

Green Goddess Dressing

Ingredients

  • 1 Cup Greek Yogurt
  • 1 Cup Parsley
  • 1 Cup Cilantro
  • 1 Cup Leafy Herbs i.e., basil, mint, dill, tarragon
  • ¼ Cup Chives
  • ½ Lemon juice and zest
  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 Garlic Clove
  • ¼ Teaspoon Salt
  • 1 Teaspoon Ground Black Pepper

Instructions

  • In a blender or food processor, add all ingredients and blend for 5-10 minutes or until the mixture reaches a creamy and smooth consistency.
