White Chocolate Key Lime Cookies

It’s time for more cookies!! After making the strawberry lemonade cookies I thought about how else I could modify this shortbread recipe. There was also some influence from the research I was doing. I also wanted to try a flavor that felt more summer-like. Key lime always reminds me of summer.

Honestly, I find key limes to be fascinating. I feel like there are so many variations of citrus fruit that fall on a spectrum but I’m not actually sure where the ends are. Key limes are naturally associated with limes due to the name and the color. But they also feel so very different due to their flavors and taste. But I adore working with key limes, even if they aren’t always the easiest.

These white chocolate key lime cookies are roll and cut cookies which lean more towards dry ingredients (sugar, flour, etc.). I wanted to use mini white chocolate chips for these cookies, but I couldn’t find what I wanted so I used normal white chocolate chips and chopped them into smaller pieces. The other special ingredient would be key limes. The juice and zest can come directly from a key lime, but they are hard to work with due to their small size. Key lime juice is something that is available and can stand alone. Lime zest is also a suitable substitute for key lime zest as well.

Process

Making the Dough

To start the dough for the white chocolate key lime cookies, I started by beating butter and sugar together. I stopped the mixer to scrape down the sides to make sure that the butter wasn’t sticking to the sides of the bowl. I continue to mix with the aim of getting butter and sugar to be light and fluffy. Then I added the eggs, the key lime juice, and key lime zest. I continued to scrape down the sides to make sure everything was mixed with an even consistency.

In a separate bowl, I mixed the all-purpose flour, salt, and baking powder. Once the butter mixture has become a constituent liquid texture, I added the flour into the bowl. The flour was added in batches, about one cup at a time. After mixing, the dough should become thick and pliable. The last step for making the dough is mixing in white chocolate chips.  

Shaping and Baking

For the white chocolate key lime cookie dough, I rolled out the dough into a ¼-inch-thick slab. I tried to make this as even as possible to keep the cookies consistent for baking. Once I was satisfied with the cookie dough slab, I placed the dough in the refrigerator to chill. This helps the cookies keep their shape upon baking. Once the dough is in the fridge, I decided to preheat the oven.

The last step for the cookie dough is to cut shapes out from the slab. I used a circular cutter to match the Strawberry Lemonade cookies. It isn’t the most exciting shape but cookies being round is just a universal truth. Once all the cookies are punched out, it’s time to get them into the oven to bake.

Reflections

I love putting the key lime flavor into anything I can. Key lime pie was always a favorite dessert, but the key lime flavor was absent from other desserts. That’s one of the reasons that I really like these cookies. These white chocolate key lime cookies really bring that flavor I love into a perfect small package.

Incorporating Extras

The dough texture is like play dough, so the white chocolate chips require a little more effort. Using the mixer will cause some struggle. When I use the mixer, it often struggles against the dough and solids being added in. I have found that hands are the best tools to incorporate chocolate chips (or extras) into the dough.

White Chocolate Key Lime Cookies

These White Chocolate Key Lime Cookies have a bright citrus note with the sweet note of white chocolate wrapped in a soft sugar cookie.

Ingredients

  • 1 Cup Unsalted Butter
  • 1 Cup Sugar
  • 1 Egg
  • 2 Teaspoon Key Lime Juice
  • Zest of 2 Key Limes
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 3 ½ Cup All-Purpose Flour
  • ½ Cup Mini White Chocolate Chips

Instructions

  • In a large mixer bowl, beat the butter and sugar until light and fluffy
  • Add the egg, key lime juice, and key lime zest. Beat until combined, scraping down the sides of the bowl as needed.
  • In a separate bowl, mix the flour, salt, and baking powder. Add into the main bowl, 1 cup at a time, mixing until just combined. Mix in white chocolate.
  • Shape and roll the dough until it is ¼ inch thick. Chill for 30 minutes.
  • Using any desired cookie cutter, cut the cookies and place them on a lined baking tray. Chill the dough again while preheating the oven to 350° Fahrenheit.
  • Bake for 7 to 9 minutes or until the edges are lightly browned.
