Lemon Crinkle Cookies are a soft and delicious cookie with a citrusy lemon kick!

Ingredients
  

Cookie Dough
  • ¼ Cup Vegetable Oil
  • 1 Lemon juice and zest
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Salt
  • 1 Cup Granulated Sugar
  • 2 ¼ Cup All-Purpose Flour
  • 1 Teaspoon Cornstarch
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda
Crinkle
  • Cup Granulated Sugar
  • Cup Powdered Sugar

Method
 

  1. In a large mixing bowl, whisk together vegetable oil, lemon juice, lemon zest, granulated sugar, eggs, vanilla extract, and salt. Let whisk for about 3-5 minutes or until light and fluffy.
  2. In a small bowl, combine flour, cornstarch, baking powder, & baking soda. Add flour mixture into the vegetable oil mixture and mix until just combined.
  3. Let dough rest for at least an hour, I recommend letting it rest overnight.
  4. Pre-heat the oven to 350° Fahrenheit.
  5. Roll cookie dough into 1-inch balls. Roll in the granulated sugar and then the powdered sugar to create the crinkle. Place evenly on a baking sheet.
  6. Bake for 10 – 12 minutes. Let cool for 5 minutes on the baking sheet before transferring the cookies to a wire rack to cool completely. Enjoy!
