Rich Chocolate Cookies

These chocolate cookies are a rich and dense chocolate which are perfect for sandwiching marshmallow fluff!

Ingredients
  

  • 1 ½ Cup Unsalted Butter softened
  • 1 ½ Cup Granulated Sugar
  • 1 Egg
  • 1 ¼ Cup All-Purpose Flour
  • 1 Cup Cocoa Powder
  • 1 Tsp Baking Powder
  • ¼ Tsp Salt

Method
 

Chocolate Cookies
  1. Preheat oven to 375°F. Set up cookie tray lines with parchment paper or silicone matt.
  2. Beat butter with a mixer until creamy. Add sugar and beat until combined and fluffy (about 5-10 minutes)
  3. Add in egg and beat until well combined.
  4. Sift the flour, cocoa powder, baking powder, and salt in a separate bowl.
  5. Slow add dry ingredients to the butter mixture to make a stiff dough. Don't overmix.
  6. Divide dough into 1 inch shaped balls, leaving space for expansion.
  7. Using the base of a flat bottomed glass, press down eat ball to flatten into shape.
  8. Bake for approximately 10 minutes. Let cookies sit for 5 minutes to cool on the baking tray and then transfer to a wire rack to cool completely.
Creating Cookie Sandwhiches
  1. Place marshmallow fluff to a large disposable piping bag.
  2. Pipe a generous amount on the undersides of half of the cookies.
  3. Place the remaining cookies, undersides downwards, on top to make filled cookies.
  4. Enjoy!!
