In a large bowl, beat together the unsalted butter, sugar, and salt until light and fluffy. Add in egg and vanilla extract and mix until combined.
Add flour. The dough will become crumbly and can be kneaded together. Before kneading the dough together, split and add color as desired.
Roll out colored dough and use a cutter or use rolled out logs to create the shape on the inside of the cookie. The length of the inside shape should by 9 – 10 inches. Chill for 10-20 minutes.
Using the non-dyed dough, fill in any gaps and wrap around the edge to fully encase the interior design. Smooth out.
Wrap and Refrigerate (1 hour to 3 days)
When ready to cook, preheat oven to 350 degrees Fahrenheit.
Cut cookies into ¼ inch rounds. Rotate 90 degrees every two to three slices to maintain the design and shape.
Bake for 15 minutes or until the edges are slightly golden.
