Vegetable Rice

Veggie rice is a great all-in-one meal that is easily made without a kitchen.

Ingredients
  

  • 1 ½ Cups Basmati Rice
  • 2 ½ Cups Vegetable Broth
  • 2 Cloves Garlic minced
  • ½ Cup Onions diced
  • ½ Cup Carrots diced
  • ½ Cup Celery diced
  • 1 Tbsp Olive Oil
  • 2 Tbsp Chili Powder
  • 2 Tbsp Cumin Powder
  • ½ Cup Cilantro Optional

Equipment

  • 1 Insta-Pot

Method
 

  1. Add olive oil into the Insta-Pot. Set pot to sauté and allow the oil to heat up. Add minced garlic, onions, carrots, celery, and mushrooms and cook for about 5 minutes.
  2. Turnoff sauté on Insta-Pot, add in rice, vegetable brother, chili powder, and cumin power. Mix together.
  3. Cook for 15 minutes
  4. Mix in Cilantro
  5. Enjoy!!

Notes

If using frozen vegetables, thaw vegetables and add into the rice during the second step (after sautéing but before pressure cooking).
