Veggie rice is a great all-in-one meal that is easily made without a kitchen.

We have entered week three without a kitchen. The future looks bleak. I am running out of recipes I can make without access to my kitchen and space. All hope now lies with the Insta-Pot and Rice. The Insta-Pot is great for cooking rice, but plain rice feels kind of boring, so I wanted to zhuzh it up! I decided to throw some vegetables and spices into the rice to make it more a meal than just a side dish.
I wanted to use vegetable broth instead of water for this recipe because I wanted to cook that flavor into the rice. For the true vegetable flavor, I added onions, carrots, celery, and mushrooms. I also added in cumin and chili powder because I really cannot help myself.
Prepping the Vegetables
I am really growing to like the sauté function of the Insta-Pot. It’s really convenient for prepping the vegetables before cooking it into the rice. I placed the olive oil into the pot and heated it up to hot temperature. Then I added in the minced garlic, chopped onions, carrots, celery, and mushrooms. This step was to partially cook the vegetables because I wanted to finish them off when cooking the rice. If I had to estimated it, I cooked them and 75% of the way.
Cooking the Rice
The Insta-Pot was turned off of the sauté function before I added in the rice, vegetable stock, and spices. I don’t like keeping the sauté function because I’m worried about boiling the water too much before going into the pressure mode. But once everything is in the pot, I gave it a quick mix and then it’s time to cook! Then all that’s left is release the pressure and serve!
Rice is a blank canvas in the world of food. I love how it can be added to any meal to help cool the pallet or if can be a dish on its own. Soaking rice in a flavored liquid will allow the rice to absorb that flavor and gain a whole new flavor profile. There are just endless possibilities. Rice is one of my absolute favorite foods.
- 1 Insta-Pot
- 1 ½ Cups Basmati Rice
- 2 ½ Cups Vegetable Broth
- 2 Cloves Garlic minced
- ½ Cup Onions diced
- ½ Cup Carrots diced
- ½ Cup Celery diced
- 1 Tbsp Olive Oil
- 2 Tbsp Chili Powder
- 2 Tbsp Cumin Powder
- ½ Cup Cilantro Optional
- Add olive oil into the Insta-Pot. Set pot to sauté and allow the oil to heat up. Add minced garlic, onions, carrots, celery, and mushrooms and cook for about 5 minutes.
- Turnoff sauté on Insta-Pot, add in rice, vegetable brother, chili powder, and cumin power. Mix together.
- Cook for 15 minutes
- Mix in Cilantro
