When dealing with lemons, why not add more lemons? This lemon cream cheese frosting is a perfect complement to the lemon cake I made as a part of my Great British Bake Off Week One Challenge The frosting turned out rather interesting as the lemon juice mixing with the cream cheese cause a gel like consistency to occur. But, honestly, I like it. This frosting has a great balance of tartness and sourness that perfectly balance the sweet flavors that frosting usually brings.
Breakfast is one of the most important meals of the day, so why not make it rich and hearty?? I’ve always loved potatoes, so a breakfast hash seems to fit right in on my table. And an all in one meal makes life a lot easier – especially when it’s cooked in one pan! And the best part? You can add any toppings you want to a breakfast hash to truly make it your own and make it absolutely delicious for whatever type of breakfast you desire.
Snickerdoodles are such an underrated cookie. While the most common cookies tend to be sugar cookies or chocolate chip cookies, Snickerdoodles are so delicious that they deserve to be close to the top of the cookie hierarchy. One of the unique characteristics of a snickerdoodle is the sugar and cinnamon crust that surrounds the cookie. This gives each cookie a crisp coating which is a delightful contrast to the soft texture of each cookie. Ok, I need to go eat one of these before getting any further.
My love for beets continues on strong as I look for new and fun recipes to cook. And I thought, since beets are a root vegetable like potatoes, why not make a mashed beet? Beets provide such a rich and delicious flavor but tend to be denser than potatoes leading to a course texture for the final dish. But the mash has melt in the mouth like qualities and is absolutely delightful with its rich flavor and buttery goodness.
This recipe requires quite a bit of sugar. In fact, there is a 2:3 ratio of sugar to flour which is pretty high. But the sugar is a mix of white sugar and brown sugar to add another layer of rich flavor to the cookies. For the leavening agent in the cookies, we are using baking powder but not too much because a large rise is not desired. And, of course, we’ll need peanut butter. 😊
I am always excited to try my hand out cooking new fishes and trying new dishes. When I saw Mahi-Mahi at my local grocery store, I immediately thought about using it to make fish sticks. It wasn’t a recipe that was normally within my wheelhouse but after doing some searches on the internet, I was able to cobble together my own recipe! My partner and I have played with several different Mac and Cheese Recipes and this is one of the results from our experiments. This gooey Mac & Cheese melts in your mouth and is delicious.
I have been trying to make bread for years. But no matter what I tried; I could never get it to a place where I wanted to it be. Then I discovered cooking with a cast iron pot and the book “”, and it changed by bread making life! Not only did I gain a fantastic recipe and methods, but I also learned the proper techniques for working with dough. Armed with this knowledge, I have been able to approach many other recipes with far more success than before.
With the weather starting to turn, I suddenly got a very random craving for corn and beets. And so, I decided to go with a nice summer type salad that I came across a few years ago. This salad is so simple and is not work intensive which is absolutely fantastic for a lazy, hot day.
