White Chocolate Macadamia Cookies

These White Chocolate Macadamia Cookies combine a soft cookie with the crunch of macadamia nuts and sweetness of white chocolate.

Ingredients
  

  • 1 Cup Unsalted Butter softened
  • ¾ Cup Light Brown Sigar packed
  • ½ Cup Granulated Sugar
  • 2 Eggs
  • ½ Teaspoon Vanilla Extract
  • ½ Teaspoon Almond Extract
  • 2 ½ Cup All-Purpose Flour
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1 Cup Macadamia Nuts
  • 1 Cup White Chocolate Chips

Method
 

  1. Preheat oven to 350° Fahrenheit
  2. In a large bowl (or mixer bowl), beat the unsalted butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Add the eggs one at a time, scrape down the sides as needed. When thoroughly combined, add vanilla and almond extract.
  4. In a separate bowl - combine flour, baking soda, and salt. Add the flour mixture to the butter mixture in batches (I did in ¾ cup batches).
  5. Coarsely chop the macadamia nuts and white chocolate chips. Fold the macadamia nuts and white chocolate into the cookie dough.
  6. Using spoons, create 1-inch balls of cookies dough. Place them about 2 inches apart from each other on a baking tray.
  7. Bake for 10 to 12 minutes or until the edges are golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooking rack.
