Baked Catfish
This is a very easy and delicious baked fish recipe that takes so little time to prepare and bake!

- 1 Cup Cornmeal
- 2 Tbsp Old Bay Seasoning
- 1 Tbsp Cumin
- 1 Tbsp Paprika
- 4 Catfish Fillets
- 2 Tbsp Olive Oil
- Salt
- Ground Black Pepper
Preheat the over to 425 degrees F (I use convection bake).
In a bowl, combine cornmeal, old bay seasoning, cumin and paprika. Whisk all ingredients.
Season catfish with seal and pepper. Dredge fish in cornmeal mixture, pressing to coat.
Lay baking parchment on a baking sheet, place fish on baking sheet. Drizzle 2 tablespoons of oil.
Bake until golden, approximately 15 minutes.

In the cornmeal mixture, feel free to get creative! I found I like this mixture of spices but there are plenty of other options to mix in. Some possible examples:
- Garlic Powder
- Onion Powder
- Chili Powder
- Lemon Pepper
- Turmeric
