Method
- Preheat the over to 425 degrees F (I use convection bake).
- In a bowl, combine cornmeal, old bay seasoning, cumin and paprika. Whisk all ingredients.
- Season catfish with seal and pepper. Dredge fish in cornmeal mixture, pressing to coat.
- Lay baking parchment on a baking sheet, place fish on baking sheet. Drizzle 2 tablespoons of oil.
- Bake until golden, approximately 15 minutes.
- Enjoy!!
Notes
In the cornmeal mixture, feel free to get creative! I found I like this mixture of spices but there are plenty of other options to mix in. Some possible examples:
- Garlic Powder
- Onion Powder
- Chili Powder
- Lemon Pepper
- Turmeric
