Orange Ganache


This orange ganache is silky smooth with a rich flavor of orange running throughout the chocolatey goodness.

Chocolate Ganache is classical a mixture of chocolate and cream that can be used as a frosting, a spread, a dip, or a topping! Ganache is very versatile as it can have different textures depending on the ratio of chocolate to cream. To stay true to the Jaffa inspired Millionaire’s shortbread, I wanted to have an orange infused chocolate ganache! This ganache is silky smooth without bringing too much sweetness to the dessert which made it perfect to add to my GBBO Challenge Week Four: Signature!



Ingredients

I love ganache because of how few ingredients it requires. All you need is chocolate and cream! To infuse the orange taste throughout the ganache, I used orange juice as it wouldn’t affect the consistency of the ganache while bringing that orange flavor forward.

Process

Prepping the Orange Juice

The first step in this process is prepping the orange juice so that it can be added into the ganache. Orange juice is too thin to add into the ganache as is, so I made it into a concentrated form. This is done by boiling down the orange juice and boiling off all that excess liquid. I left this to cool while I got my chocolate ready.

Making the Ganache

Having the chocolate finely grated makes it much easier to melt the chocolate. Instead of melting the chocolate directly, I boiled the cream and used that boiled cream to melt the chocolate. There was some arm work needed to mix the chocolate into the cream and get that smooth consistency. Then orange juice concentrate after the final ganache consistency was formed.

Reflections

The longest part of this process is cooking down the orange juice to make a sticky concentrate. This process ended up take quite some time because I reduced the juice over a low heat. Although, orange seems to have a weird smell when cooking overheat. I’m not sure how common reducing the orange juice is but I don’t know how much I recommend it. If I were to do this again, I probably would use an orange extract instead of the orange juice concentrate.

Ingredients
  

  • 1 ¼ Cup Orange Juice
  • ½ Cup Dark Chocolate
  • ½ Cup Milk Chocolate
  • ½ Cup Heavy Whipping Cream

Instructions
 

  • Pour orange juice into a medium pan and simmer for about 25 – 30 minutes until reduced to 1/8 cups. Pour into a small bowl and leave to cool.
  • Combine both chocolate into a heatproof bowl. Heat cream until boiling and stir into the chocolate until a smooth mixture forms.
  • Add the orange juice concentrate into the chocolate mixture. 
  • Place ganache into desired container and let set.
  • Enjoy!!

Notes

For a thicker ganache, add more chocolate. 
For a thinner ganache, add more heavy whipping cream.
